Guided by consultant Carlo Costa, both table olives and oil are produced from the olive groves fringing the vineyards on the farm.
The space available on the farm allowed for the planting of only 1000 trees, so olive production was never going to be a major part of Nova Zonnestraal’s farming activities. Nevertheless, Carlo Costa (pictured above), very highly regarded in olive production circles, and the author of “Olive Production in South Africa”, was approached for advice. Under his guidance, a selection of Mission, Coratina, Frantoio and Leccino trees were planted, which have allowed for the production of a fine blend of Extra Virgin Oil. The olives are pressed by Chaloner in Stellenbosch.
